Description
Warm, gooey peaches topped with a golden caramelized cake topping and served with vanilla ice cream. This small ramekin dessert makes two cozy individual servings.

- 2 tablespoons unsalted butter, divided
- 1/4 cup all-purpose flour
- 1/8 cup granulated sugar, for cobbler topping
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/8 cup milk
- 1/4 teaspoon vanilla extract
- 1 cup sliced peaches
- 1/8 cup granulated sugar, for peaches
- 2 scoops vanilla ice cream, for serving
Instructions
- Preheat oven to 350ºF.
- Add 1 tablespoon of butter to each of two 6-ounce ramekins.
- Place ramekins in the preheated oven just until the butter melts, then remove promptly.
- In a small bowl, combine flour, 1/8 cup granulated sugar, baking powder, and salt.
- Make a well in the center of the dry mixture, then add milk and vanilla extract.
- Stir until the batter looks smooth and no lumps remain.
- In another bowl, combine sliced peaches with 1/8 cup granulated sugar.
- Divide the peach mixture evenly between the two buttered ramekins.
- Spoon the cobbler topping evenly over both ramekins.
- Place ramekins on a baking tray or cookie sheet to catch any drips.
- Bake for 30 minutes, or until the peaches bubble and the topping sets.
- Broil for 3 minutes, if desired, to brown the top while watching closely.
- Cool for 5 to 10 minutes.
- Serve warm with vanilla ice cream.
Notes
- If using canned peaches, drain the liquid well.
- If canned peaches are already sweetened, omit the 1/8 cup sugar added to the peaches.
- Place ramekins on a baking tray to prevent drips from reaching the oven floor.
- Watch closely during broiling because the topping can brown quickly.
