Description

Hot Honey Chicken rice bowls with Cajun-spiced chicken, roasted sweet potatoes, broccoli, fluffy rice, and a creamy chipotle sauce.


Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 3 sweet potatoes
  • 3 cups broccoli florets
  • Cooked white rice
  • Sliced avocado
  • Green onions
  • ½ cup mayonnaise or Greek yogurt
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt
  • Black pepper

Instructions

  1. Preheat oven to 425°F and line sheet pans with parchment paper.
  2. Toss sweet potatoes and broccoli with olive oil and Cajun seasoning and spread on pan.
  3. Toss chicken with remaining oil and seasoning and arrange on separate pan.
  4. Bake for 15–20 minutes until chicken reaches 165°F and vegetables are tender.
  5. Whisk together chipotle sauce ingredients until smooth.
  6. Assemble bowls with rice, chicken, vegetables, avocado, and drizzle with sauce and hot honey.

Notes

  1. Store components separately for meal prep.
  2. Add sauce and hot honey after reheating for best flavor.
