Hot Honey Chicken rice bowls with Cajun-spiced chicken, roasted sweet potatoes, broccoli, fluffy rice, and a creamy chipotle sauce.

- 1 pound boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 3 sweet potatoes
- 3 cups broccoli florets
- Cooked white rice
- Sliced avocado
- Green onions
- ½ cup mayonnaise or Greek yogurt
- 1 tablespoon chipotle chili powder
- 1 teaspoon garlic powder
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt
- Black pepper
Instructions
- Preheat oven to 425°F and line sheet pans with parchment paper.
- Toss sweet potatoes and broccoli with olive oil and Cajun seasoning and spread on pan.
- Toss chicken with remaining oil and seasoning and arrange on separate pan.
- Bake for 15–20 minutes until chicken reaches 165°F and vegetables are tender.
- Whisk together chipotle sauce ingredients until smooth.
- Assemble bowls with rice, chicken, vegetables, avocado, and drizzle with sauce and hot honey.
