Description
Sweet summer pie filled with peaches, strawberries, honey, and a flaky pecan crust.
Ingredients

- 1 3/4 cups all-purpose flour
- 3/4 cup finely ground toasted pecans
- 1 teaspoon kosher salt
- 1 cup chilled unsalted butter
- 1 large egg yolk
- 1/3 cup cold buttermilk
- 5 cups fresh sliced peaches
- 2 cups fresh strawberries
- 1/3 cup brown sugar
- 1/2 cup all-purpose flour
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon bourbon
- 2 tablespoons butter
- 1 beaten egg
- Coarse sugar for sprinkling
Instructions
- Mix flour, pecans, and salt in a bowl.
- Cut butter into the flour mixture until crumbly.
- Whisk egg yolk and buttermilk together.
- Combine wet and dry ingredients to form dough.
- Divide dough into two disks.
- Roll out one crust and place into pie plate.
- Mix peaches, strawberries, sugar, flour, honey, vanilla, and bourbon.
- Add filling to crust and top with sliced butter.
- Create lattice crust with remaining dough.
- Brush crust with egg and sprinkle sugar on top.
- Chill pie for 1 hour.
- Bake at 350 degrees Fahrenheit for 1 hour until golden brown.
- Cool before slicing and serving.
Notes
- Tent foil over crust if browning too quickly.
- Frozen fruit can work if drained well.
- Serve warm with vanilla ice cream for best flavor.
