For the Chicken Bites:

  • 225 g (½ lb) boneless, skinless chicken breasts, cut into 1-inch pieces

  • 2 tbsp olive oil

  • Salt, to taste

  • ⅛ tsp black pepper

  • 1 tsp garlic powder

  • 6 cloves garlic, minced

  • ¼ cup honey

  • 2 tbsp soy sauce (low sodium)

  • ½ tbsp apple cider vinegar

  • 1 tbsp unsalted butter

For the Creamy Rice (serves 4):

  • 1 ½ cups jasmine or long-grain white rice

  • 3 cups chicken broth (low sodium)

  • 1 cup heavy cream

  • 1 cup shredded mozzarella cheese

  • ½ cup cream cheese, cubed

  • ½ cup Parmesan cheese, freshly grated

  • 2 tbsp unsalted butter

  • 1 tsp salt (adjust to taste)

  • ⅛ tsp black pepper

  • 1 tsp Italian seasoning

Garnishes (optional):

  • Fresh parsley, chopped

  • Extra Parmesan cheese

  • Red pepper flakes

  • Sesame seeds


Instructions

  • Cook the Rice: Rinse rice until water runs clear. In a pot, bring rice and chicken broth to a boil. Cover, reduce heat, and simmer 18–20 minutes. Rest 5 minutes.

  • Season Chicken: Pat chicken dry. Season with salt, pepper, and garlic powder. Let rest.

  • Make Creamy Rice Base: Stir butter into hot rice. Add cream and cream cheese, stirring until smooth. Mix in mozzarella, Parmesan, salt, pepper, and Italian seasoning. Keep warm.

  • Sear Chicken: Heat olive oil in a skillet. Cook chicken in a single layer for 3–4 minutes per side until golden and cooked through (165°F internal temp). Push to edges of pan.

  • Make Glaze: Melt butter in skillet center. Add minced garlic, sauté 30–60 seconds. Stir in honey, soy sauce, and vinegar. Simmer 2–3 minutes until thickened and glossy. Toss chicken to coat.

  • Assemble: Fluff rice and adjust creaminess if needed. Plate rice, top with glazed chicken, and spoon over extra sauce. Garnish and serve hot.

Notes

Don’t overcrowd the pan—cook chicken in batches if needed for a good sear.

If glaze gets too thick, loosen with a teaspoon of water or broth.

Use freshly grated Parmesan for smooth rice texture.

Store chicken and rice separately to avoid mushiness.

Chicken freezes well for up to 2 months; rice does not freeze as successfully.
