Description

Tender Honey BBQ chicken with crispy roasted potatoes coated in a sweet and smoky sauce, perfect for an easy one-pan dinner.


Ingredients

Scale
  • 2 lbs boneless skinless chicken breasts cut into cubes
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper
  • 1 cup honey BBQ sauce
  • 2 lbs Yukon Gold potatoes cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • Salt and black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Sour cream or Greek yogurt
  • Crispy fried onions

Instructions

  1. Preheat oven to 400°F
  2. Cube potatoes and season with oil and spices
  3. Roast potatoes for 30 to 40 minutes until golden
  4. Cut and season chicken pieces
  5. Cook chicken in skillet until browned and fully cooked
  6. Add honey BBQ sauce and simmer until thickened
  7. Combine roasted potatoes with chicken
  8. Top with cheese and allow to melt
  9. Garnish with green onions and serve

Notes

  1. Substitute sweet or red potatoes if desired
  2. Adjust cayenne pepper for spice preference
  3. Use homemade or store bought BBQ sauce
  4. Store leftovers in refrigerator up to 3 days
  5. Grill chicken instead of skillet for smoky flavor
