- 2 lbs boneless skinless chicken breasts cut into cubes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and black pepper
- 1 cup honey BBQ sauce
- 2 lbs Yukon Gold potatoes cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- Salt and black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Sour cream or Greek yogurt
- Crispy fried onions
Instructions
- Preheat oven to 400°F
- Cube potatoes and season with oil and spices
- Roast potatoes for 30 to 40 minutes until golden
- Cut and season chicken pieces
- Cook chicken in skillet until browned and fully cooked
- Add honey BBQ sauce and simmer until thickened
- Combine roasted potatoes with chicken
- Top with cheese and allow to melt
- Garnish with green onions and serve

- Substitute sweet or red potatoes if desired
