Description

This French-inspired fruit tart features a buttery tart crust, creamy vanilla pastry cream, and a colorful fresh fruit topping finished with a glossy apricot glaze.


Ingredients

  • 1 prepared sweet tart dough or pâte sucrée crust
  • 1 batch vanilla pastry cream
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 2 clementines, peeled into segments
  • 1/3 cup apricot preserves
  • 1 tablespoon water

Instructions

  1. Prepare the vanilla pastry cream and refrigerate until chilled and firm.
  2. Bake the tart crust in a 10-inch tart pan until lightly golden, then cool completely.
  3. Place the tart shell onto a serving platter before filling.
  4. Spread the chilled pastry cream evenly into the crust.
  5. Arrange strawberries, blueberries, raspberries, blackberries, and clementine segments over the cream.
  6. Microwave apricot preserves with water for 30 seconds until smooth.
  7. Brush the glaze over the fruit evenly for a glossy finish.
  8. Chill the tart for 30 minutes before slicing and serving.

Notes

  1. Dry fruit thoroughly before assembling the tart.
  2. Assemble close to serving time for the crispest crust.
  3. Store leftovers refrigerated for up to 3 days.
