Description

Flaky, buttery homemade cronuts filled with creamy pastry cream and rolled in sugar for a classic bakery-style dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk, warmed
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups vegetable oil for frying
  • 1/2 cup sugar for coating
  • 1 cup pastry cream or whipped cream
  • 1 tablespoon vanilla extract

Instructions

  1. Dissolve yeast in warm milk and let sit for 5 minutes until foamy.
  2. Mix flour, sugar, and salt, then cut in cold butter until crumbly.
  3. Add yeast mixture, egg, and vanilla and mix into a soft dough.
  4. Knead dough for 5 to 7 minutes until smooth, then refrigerate for 1 hour.
  5. Roll dough into a rectangle, fold like a letter, and repeat three times.
  6. Cut doughnut shapes and let rise for 30 minutes.
  7. Heat oil to 350°F and fry cronuts 2 to 3 minutes per side until golden.
  8. Drain, roll in sugar, and fill with pastry cream or whipped cream.
