Description

Classic Homemade Cherry Pie with flaky butter crust and sweet cherry filling made from fresh or frozen cherries.


Ingredients

  • 6 cups sweet cherries, pitted and halved
  • 2/3 cup granulated sugar
  • 1/3 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract
  • 1 tablespoon unsalted butter
  • 2 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 7 tablespoons ice water
  • 1 egg
  • 1 tablespoon milk
  • Coarse sugar for topping

Instructions

  1. Wash and pit the cherries before slicing them in half.
  2. Mix cherries with sugar, cornstarch, lemon juice, vanilla, salt, and almond extract.
  3. Prepare the crust by combining flour, sugar, and salt, then cut in cold butter.
  4. Add ice water until dough forms and divide into two disks.
  5. Roll out one crust and place it in a pie dish.
  6. Fill the crust with cherry filling and dot with butter.
  7. Roll out the second crust and place it over the pie or create a lattice design.
  8. Brush with egg wash and sprinkle with coarse sugar.
  9. Bake at 400 degrees Fahrenheit for 20 minutes.
  10. Reduce heat to 350 degrees Fahrenheit and bake for 40 to 50 minutes until bubbly and golden.
  11. Cool completely before slicing and serving.

Notes

  1. Keep the butter cold for a flaky crust.
  2. Frozen cherries work well after thawing and draining excess liquid.
  3. Allow the pie to cool fully for the filling to set properly.
