Description
A classic homemade apple pie with tender cinnamon-spiced apples, brown sugar sauce, and a flaky golden double crust.

- 1 double-crust pie dough recipe
- 1/4 cup butter
- 8 cups apples, peeled, cored, and thinly sliced
- 2/3 cup lightly packed brown sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon water
- Coarse sugar, optional
Instructions
- Set a 9-inch pie plate nearby and preheat the oven to 425°F.
- Melt the butter in a large pot over medium-low heat.
- Add the sliced apples, brown sugar, flour, cinnamon, lemon juice, and salt. Stir well.
- Cook for 8 to 10 minutes, stirring occasionally, until the apples begin to soften. Remove from the heat and cool.
- Divide the prepared pie dough into two discs. Roll one disc on a lightly floured surface to about 1/8 inch thick and slightly wider than the pie plate.
- Transfer the dough to the pie plate and press it gently across the bottom and sides.
- Whisk the egg and water together in a small bowl to make the egg wash.
- Spoon the cooled apple filling evenly into the bottom crust.
- Roll out the second dough disc and place it over the filling, or cut it into strips and weave a lattice.
- Cut vents in a solid top crust. Trim the extra dough, seal the edges, and crimp them.
- Brush the top lightly with egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F for 15 minutes.
- Reduce the oven temperature to 350°F and bake for about 40 minutes, until the crust turns golden brown and the filling bubbles through the vents.
- Cover the edges loosely with aluminum foil if they brown too quickly.
- Cool the pie on a wire rack for at least 3 hours before slicing.
Notes
- Granny Smith apples provide tart flavor and hold their shape well.
- Golden Delicious or Gala apples also work, or combine tart and sweet varieties.
- Keep the pie dough cold for the flakiest texture.
- Cool the cooked apple filling before adding it to the crust.
- Store covered at room temperature for up to 2 days or refrigerate for up to 4 days.
