Description

Homemade Apple Cobbler with tender spiced apples, a golden buttermilk cobbler topping, and cozy cinnamon flavor. Serve it warm with vanilla ice cream for a classic American dessert.

Ingredients

Scale
  • 5 pounds apples, peeled and thinly sliced
  • 1/2 teaspoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 5 tablespoons all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cardamom, optional
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 cup cold butter, cut into small cubes
  • 2 tablespoons granulated sugar or raw sugar
  • Vanilla ice cream, for serving

Instructions

  1. Peel and thinly slice the apples, then toss them with lemon zest and lemon juice.
  2. Add the apples to a large skillet with granulated sugar, brown sugar, flour, cinnamon, nutmeg, cardamom, and salt.
  3. Cook over medium heat for about 20 minutes, stirring every few minutes, until the apples turn fork-tender but still hold their shape.
  4. Remove the skillet from the heat, stir in the vanilla extract, and spread the apples into a 9-by-13-inch baking dish.
  5. Preheat the oven to 375°F.
  6. Whisk the flour, granulated sugar, kosher salt, and baking powder in a large bowl.
  7. Whisk the buttermilk and egg in a small bowl, then add the mixture to the dry ingredients.
  8. Cut the liquid into the flour mixture until a shaggy dough forms.
  9. Spoon the cobbler topping evenly over the apple filling.
  10. Scatter the cold butter cubes over the topping, then sprinkle with sugar.
  11. Bake for 45 to 55 minutes, until the topping turns golden brown and the apple filling bubbles strongly.
  12. Let the cobbler rest for at least 15 minutes before serving warm with vanilla ice cream.

Notes

  1. For a faster version, skip cooking the apples and mix the filling directly in the baking dish.
  2. If using raw apples, increase the flour in the filling to 1/2 cup to help thicken the juices.
  3. Use a mix of tart and sweet apples for the best flavor and texture.
  4. For extra crunch, use raw sugar on top before baking.
  5. For a darker crisp top, broil for 1 to 3 minutes at the end while watching closely.
  6. Store leftovers loosely covered at room temperature for up to 2 days, then refrigerate.
