Description

Hobo Casserole combines browned ground beef, thinly sliced potatoes, onions, garlic, broth, and two cheeses in one hearty baked dinner. The potatoes turn tender while the cheddar and Parmesan create a golden, bubbling topping.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 to 5 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk, optional
  • Fresh parsley for garnish, optional

Instructions

  1. Preheat the oven to 375°F and grease a 9-by-13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook for 5 to 7 minutes, breaking it into crumbles, until browned. Drain excess fat.
  3. Add the chopped onion and cook for 3 minutes. Stir in the garlic and cook for 1 minute.
  4. Toss the thinly sliced potatoes with Italian seasoning, paprika, salt, and black pepper.
  5. Spread the cooked beef mixture evenly in the baking dish. Arrange the seasoned potatoes over the beef in overlapping layers.
  6. Sprinkle the cheddar and Parmesan over the potatoes. Pour the broth around the edges and drizzle the milk over the top, if using.
  7. Cover tightly with foil and bake for 30 minutes. Remove the foil and bake for another 15 to 20 minutes, until the potatoes feel tender and the cheese looks golden.
  8. Rest the casserole for 10 minutes. Garnish with parsley and serve hot.

Notes

  1. Slice the potatoes about one-eighth inch thick so they cook evenly.
  2. Brown the beef well and drain excess fat before assembling the casserole.
  3. Pour the broth around the edges instead of directly over the cheese.
  4. Keep the foil tightly sealed during the first 30 minutes to trap steam.
  5. Use certified gluten-free broth and seasonings when preparing the dish for a gluten-free diet.
