Description

Hobo casserole recipe with layers of seasoned ground beef, tender russet potatoes, creamy mushroom and chicken sauce, and melted cheddar cheese baked until golden and hearty.


Ingredients

  • 2 pounds ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 (12-ounce) can evaporated milk
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 (10.5-ounce) can cream of chicken soup
  • 3 cups shredded cheddar cheese, divided
  • 1 cup fried onions

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch baking dish with cooking spray.
  2. Cook the ground beef in a large skillet over medium-high heat until no pink remains. Season with salt and pepper.
  3. Add diced onion and bell peppers and cook until softened. Drain excess grease and set aside.
  4. In a medium bowl whisk together evaporated milk, cream of mushroom soup, and cream of chicken soup until smooth.
  5. Drain sliced potatoes and pat them dry.
  6. Layer half of the potatoes in the prepared baking dish.
  7. Top with half of the beef mixture, half of the sauce mixture, and 1 1/2 cups shredded cheddar cheese.
  8. Repeat layers with the remaining potatoes, beef mixture, sauce, and remaining cheese.
  9. Sprinkle fried onions over the top and cover tightly with aluminum foil.
  10. Bake for 75 to 80 minutes until the potatoes are tender and the internal temperature reaches 165°F.
  11. Remove foil and broil for 1 to 2 minutes until the top becomes golden brown.
  12. Let the casserole rest for 10 minutes before serving.

Notes

  1. Slice potatoes thinly for even cooking.
  2. Drain grease from the beef to avoid excess oil in the casserole.
  3. Allow the casserole to rest before serving so the sauce thickens and sets.
