Description

This Hobo Casserole is a hearty comfort dish with layers of potatoes, seasoned ground beef, creamy mushroom sauce, and melted cheddar.


Ingredients

1 lb lean ground beef

1/2 cup yellow onion diced

1 green bell pepper diced

2 cloves garlic minced

23 medium Russet potatoes thinly sliced

1 can condensed cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

Salt and pepper to taste

French fried onions for topping

Sliced green onions or parsley for garnish


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch dish.

2. Brown ground beef in a skillet for 7-10 minutes.

3. Add onion, pepper, and garlic; cook until fragrant.

4. Combine mushroom soup and sour cream in a bowl.

5. Layer potatoes in dish, top with beef mixture and sauce.

6. Sprinkle cheddar cheese and bake 30-35 minutes.

7. Top with fried onions and bake 5 minutes more.

8. Cool slightly and garnish before serving.

Notes

Store leftovers up to 3 days in the fridge.
