Ingredients

1 lb ground beef

1 medium onion, diced

3–4 medium russet potatoes, thinly sliced

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1 cup shredded cheddar cheese

Salt and pepper to taste
Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

In a large skillet, cook the ground beef with the diced onion over medium heat until browned and the onion is soft. Drain any excess fat.

In a small bowl, mix the cream of mushroom soup with the milk until smooth.

Layer the sliced potatoes in the greased baking dish. Spread the cooked beef and onion mixture over the potatoes, followed by the soup mixture.

Top with shredded cheddar cheese.

Cover the dish with foil and bake for 1 hour. After 1 hour, remove the foil and bake for another 30 minutes until the potatoes are tender and the cheese is bubbly and golden.

You can substitute the ground beef with turkey or a plant-based protein for a lighter or vegetarian version.
For a low-carb version, replace the potatoes with cauliflower.
