Description

Fresh peaches, warm cinnamon, rolled oats, and a buttery crumble come together in these easy summer dessert bars. They are ideal for picnics, potlucks, family gatherings, and afternoon snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar, divided if sweetening the peaches
  • 1/2 cup packed brown sugar
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups fresh peaches, peeled and diced, about 3 to 4 medium peaches

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch square baking dish and line it with parchment paper, leaving an overhang on two sides.
  2. Peel and dice the peaches into small, even pieces.
  3. Stir the flour, brown sugar, granulated sugar, rolled oats, baking powder, salt, and cinnamon together in a large bowl.
  4. Add the softened butter and work it into the dry ingredients until coarse, moist crumbs form.
  5. Reserve about 1 cup of the crumb mixture for the topping.
  6. Press the remaining mixture firmly and evenly into the bottom of the prepared baking dish.
  7. Toss the diced peaches with the vanilla extract and up to 2 tablespoons of the measured granulated sugar when additional sweetness is needed.
  8. Spread the peaches evenly over the crust.
  9. Sprinkle the reserved crumb mixture loosely over the peaches.
  10. Bake for 30 to 35 minutes, until the topping turns golden brown and peach juices bubble lightly around the edges.
  11. Cool the bars in the pan for at least 10 minutes. Cool completely for the cleanest slices.
  12. Lift the slab from the pan and cut it into 9 bars.

Notes

  1. Use ripe, fragrant peaches that feel firm enough to dice.
  2. Drain thawed frozen peaches or canned peaches thoroughly before using them.
  3. Add 1/4 cup chopped pecans, sliced almonds, or coconut to the topping for extra crunch.
  4. Store cooled bars in an airtight container in the refrigerator for up to 5 days.
  5. Freeze individually wrapped bars in a sealed container for up to 2 months.
