Description

Healthy Oatmeal Breakfast Cookies made with oats, banana, applesauce, peanut butter, and egg for a soft kid-friendly snack.


Ingredients

Scale
  • 1 ¼ cup gluten free rolled oats
  • 1 ripe banana, mashed
  • ¼ cup unsweetened applesauce
  • 2 tbsp peanut butter
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ tsp cinnamon

Instructions

  1. Preheat oven to 350°F and line baking sheet with parchment paper
  2. In a bowl mix oats, banana, applesauce, peanut butter, egg, vanilla, and cinnamon
  3. Stir until fully combined into a thick batter
  4. Scoop dough into cookie portions and place on tray
  5. Flatten each cookie gently
  6. Bake for 10 minutes until lightly golden
  7. Cool before serving

Notes

  1. Store in fridge up to 5 days
  2. Freeze up to 3 months
  3. Use flax egg for vegan option
  4. Best served slightly warm for soft texture
