- 1 1/2 cups grated zucchini, squeezed dry
- 1 large egg
- 1/2 cup unsweetened applesauce
- 3/4 cup maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cacao powder
- 1 3/4 cups whole wheat flour or spelt flour
- 3/4 cup dark chocolate chips, divided
- Cooking spray
Instructions
- Preheat oven to 350°F and prepare a 9 x 5-inch loaf pan with parchment paper and cooking spray.
- Whisk zucchini, egg, applesauce, maple syrup, vanilla, baking soda, baking powder, and salt.
- Add cacao powder and whisk until smooth.
- Fold in flour until just combined.
- Stir in 1/2 cup chocolate chips.
- Transfer batter to loaf pan and top with remaining chocolate chips.
- Bake for 60 to 70 minutes until a toothpick comes out clean.
- Cool for 10 minutes in pan, then transfer to a rack and cool before slicing.
Notes
- Store loosely covered at room temperature for 1 to 2 days.
- Refrigerate leftovers for several days.
- Freeze slices for up to 3 months.
