Description

These Healthy Breakfast Cereal Bars are quick, chewy, no-bake snack bars made with cereal, nut butter, and honey or agave. They are perfect for breakfast prep, lunch boxes, and easy grab-and-go snacks.


Ingredients

  • 3 cups cereal of choice, such as Cheerios, puffed rice, crispy rice cereal, or whole grain flakes
  • 2/3 cup peanut butter or nut butter of choice
  • 1/2 cup honey, agave, or brown rice syrup
  • 1/2 teaspoon salt, optional
  • 3 tablespoons protein powder, optional
  • Optional mix-ins: mini chocolate chips, chia seeds, flaxseed meal, dried cranberries, chopped nuts, or shredded coconut

Instructions

  1. Line an 8-inch square pan with parchment paper, leaving overhang on the sides for easy lifting.
  2. Add the cereal to a large mixing bowl.
  3. If needed, gently warm the peanut butter or nut butter until smooth and easy to stir.
  4. Stir the nut butter, honey or agave, salt, and protein powder together until smooth.
  5. Pour the nut butter mixture over the cereal and stir until every piece is evenly coated.
  6. Transfer the mixture to the prepared pan and spread it into an even layer.
  7. Place a second sheet of parchment paper on top and press down very firmly with your hands, a measuring cup, or a flat spatula.
  8. Freeze for 30 minutes, or until firm enough to slice.
  9. Lift the cereal slab from the pan and cut it into 9 bars.
  10. Serve right away or store in the refrigerator or freezer.

Notes

  1. Press the cereal mixture very firmly into the pan so the bars hold together after slicing.
  2. Use smooth, creamy nut butter for the best texture.
  3. Brown rice syrup creates the firmest hold, while honey gives a classic sweet flavor.
  4. Store bars in the refrigerator for up to 1 week or freeze for up to 2 months.
  5. Use agave or brown rice syrup instead of honey for a vegan-friendly version.
