Description

Healthy Banana Oatmeal Cookies are soft, chewy chocolate chip banana oat cookies made with ripe bananas, almond butter, rolled oats, maple syrup, walnuts, and chocolate chips. They are vegan, flourless, gluten-free friendly, and ready in 25 minutes.


Ingredients

  • 2 large ripe bananas, mashed, about 3/4 cup
  • 1/2 cup almond butter, or peanut butter
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats, gluten-free if needed
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon, optional
  • 1/4 cup chocolate chips, dairy-free if needed
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
  2. Mash the ripe bananas in a medium bowl until mostly smooth.
  3. Add almond butter, maple syrup, and vanilla extract to the mashed bananas, then stir until creamy and combined.
  4. In a separate bowl, stir together rolled oats, salt, cinnamon, chocolate chips, and chopped walnuts.
  5. Add the wet banana mixture to the oat mixture and stir until all ingredients are evenly combined.
  6. Let the dough rest for 2 minutes. If the dough feels too wet, stir in a small handful of extra oats.
  7. Use a cookie scoop to portion the dough onto the prepared baking sheet.
  8. Gently press each cookie down with your fingers or the back of a spoon because the cookies will not spread much.
  9. Bake for 12 to 15 minutes, until the edges look golden brown and the centers look set.
  10. Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to cool and firm up.

Notes

  1. Use ripe bananas for the best natural sweetness and soft texture.
  2. Flatten the cookies slightly before baking since they do not spread much.
  3. Rolled oats give the best chewy texture.
  4. Add a small handful of oats if the dough feels too wet.
  5. Bake just until the edges are set for soft cookies.
  6. Let the cookies cool slightly so they firm up before serving.
  7. Use certified gluten-free oats if needed.
  8. Use dairy-free chocolate chips to keep the recipe vegan.
