Ingredients
-
2 tablespoons olive oil
-
3 cloves garlic, thinly sliced
-
2-inch knob fresh ginger, peeled and thinly sliced
-
1 shallot, thinly sliced
-
1.5 pounds boneless skinless chicken thighs
-
1.5 teaspoons salt
-
1 teaspoon turmeric
-
3 to 4 cups fresh baby spinach
-
1 cup jasmine rice
-
6 to 8 cups chicken broth
-
Juice of 4 limes (about 1/4 cup)
-
Splash of soy sauce or fish sauce (optional)
-
Fresh herbs for topping (mint, basil, cilantro)
-
Peanuts or cashews for topping (optional)
Instructions
-
Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add garlic, ginger, and shallots. Sauté for 3–5 minutes until soft and fragrant.
-
Cook Chicken: Add chicken thighs to the pot. Sprinkle with 1 teaspoon salt and turmeric. Sear for 3–4 minutes per side. Add a splash of water if the bottom browns too much. Remove and set aside.
-
Wilt Spinach: Add spinach and 1/2 teaspoon salt to the pot. Cook until wilted, then remove and set aside.
-
Cook Rice: Stir in jasmine rice and cook for 1–2 minutes. Add 6 cups of broth and bring to a simmer.
-
Shred Chicken: While rice cooks (15–20 minutes), shred the chicken.
-
Combine: Return chicken and spinach to the pot. Stir in lime juice and optional soy/fish sauce. Adjust seasoning and add more broth if needed.
-
Serve: Top each bowl with fresh herbs and nuts. Serve warm.
Notes
Use rotisserie chicken to save time.
Substitute chicken with tofu or chickpeas for a vegetarian version.
Brown rice can be used but will need longer cooking.
Fresh herbs and lime juice add a bright finish—adjust to taste.
Keep extra broth on hand to loosen soup when reheating.
Food safety: if you cook the chicken yourself, make sure it reaches an internal temperature of 165°F (74°C), as recommended by the USDA and Health Canada.
