Description

Creamy Hawaiian cheesecake bars with pineapple, coconut, and macadamia nuts on a buttery crust.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 cups butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 16 oz cream cheese
  • 2 eggs
  • 2 cups powdered sugar
  • 1/2 cup sugar
  • 2 cups crushed pineapple
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips
  • 1 cup macadamia nuts
  • 1 cup coconut

Instructions

  1. Preheat oven to 300°F and line pan
  2. Mix crust ingredients and press into pan
  3. Bake crust 15 minutes
  4. Mix filling ingredients until smooth
  5. Fold in chocolate chips and nuts
  6. Spread filling over crust
  7. Bake at 350°F for 25 minutes
  8. Top with toasted coconut and nuts
  9. Chill before cutting into bars

Notes

  1. Chill at least 12 hours for best texture
  2. Do not overbake
  3. Use room temperature cream cheese
