Description

Ground Turkey Sweet Potato Casserole is a wholesome and flavorful dish that combines lean ground turkey with nutrient-rich sweet potatoes. For the Casserole:

  • 1 lb Ground turkey (lean or extra-lean)

  • 34 Sweet potatoes (peeled and diced or mashed)

  • 1 Onion (chopped)

  • 2 Garlic cloves (minced)

  • 1 Bell pepper (chopped)

  • 1 tbsp Olive oil

  • 1 tsp Salt

  • ½ tsp Pepper

  • 1 tsp Dried thyme

  • 1 tsp Dried rosemary

  • ½ cup Shredded cheese (optional)

Optional Add-ins:

  • 1 can Black beans (drained and rinsed)

  • 1 cup Corn kernels


Instructions

  • Prepare the Ingredients: Peel and dice the sweet potatoes. You can also mash them for a smoother texture. Season the ground turkey with your choice of spices. Chop the vegetables and set them aside.

  • Cook the Ground Turkey: In a skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks. Add the onions, garlic, and bell peppers. Cook for another 5 minutes until softened.

  • Assemble the Casserole: Preheat the oven to 375°F (190°C). In a baking dish, layer the cooked ground turkey mixture, then add the sweet potatoes on top. If using, add black beans and corn. Optionally, sprinkle shredded cheese on top.

  • Bake the Casserole: Bake for 30-40 minutes, or until the casserole is golden on top and bubbly. The sweet potatoes should be tender.

Notes

Customize by adding different vegetables, such as spinach or zucchini.

For a dairy-free version, omit the cheese or use a dairy-free substitute.

You can swap the ground turkey for ground chicken for a slight flavor variation.
