Ingredients

1 lb lean ground beef

1 cup orzo pasta

1 medium onion, finely chopped

3 garlic cloves, minced

1 can (14.5 oz) diced tomatoes with herbs

2 cups low-sodium beef broth

2 cups fresh spinach (or other greens)

1 tsp Italian seasoning (basil, oregano, thyme)

Salt and pepper, to taste

Olive oil, for sautéing
Instructions

Chop onion and mince garlic.

Heat olive oil in a large skillet over medium heat. Sauté onion until soft and translucent, about 5 minutes.

Add ground beef, season with salt and pepper, and cook until browned, 6–8 minutes.

Stir in garlic and diced tomatoes. Simmer 2–3 minutes.

Add orzo and beef broth. Bring to a boil, reduce heat, and simmer uncovered for 10–12 minutes, stirring occasionally.

Once orzo is tender and most liquid is absorbed, stir in spinach and Italian seasoning. Cook 1 more minute until spinach wilts.

Taste, adjust seasoning, and serve hot.
Notes
Add shredded mozzarella or Parmesan at the end for a cheesy twist.
Swap spinach with kale, arugula, or frozen peas.
