Ingredients

1.5 to 2 lb (680 to 900 g) London Broil, about 1.5 inches thick

1/2 cup (120 ml) soy sauce

2 tablespoons (30 ml) balsamic vinegar

2 tablespoons (30 ml) ketchup

3 cloves garlic, minced

1.5 tablespoons (22 ml) vegetable oil

1 teaspoon chopped fresh rosemary

1 teaspoon chopped fresh thyme

1/2 teaspoon dried rubbed sage

1.5 teaspoons coarsely ground black pepper

1 teaspoon paprika
Instructions

Lightly score both sides of the steak in a crisscross pattern.

Blend soy sauce, vinegar, ketchup, garlic, oil, rosemary, thyme, and sage until smooth.

Place steak in a zip-top bag, pour marinade over it, seal, and massage. Let sit at room temp for 2 hours.

Preheat grill on high with lid closed for 15 minutes.

Mix black pepper and paprika. Remove steak from marinade, pat dry, and rub with spice blend.

Grill for 5–9 minutes, flipping every minute, until desired doneness is reached.

Rest the steak for 10 minutes, then slice thinly against the grain and serve.
