Juicy grilled chicken breast topped with melted mozzarella, fresh tomato, basil, and a homemade balsamic reduction.

- 4 chicken breasts
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt
- Black pepper
- 4 slices mozzarella cheese
- 4 slices tomato
- 2 tablespoons fresh basil, sliced
- 1/2 cup balsamic vinegar
- 2 tablespoons light brown sugar
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and pepper on both sides.
- Spray grill grates with nonstick cooking spray.
- Place chicken breasts on grill and cook until almost fully cooked, about 5 to 6 minutes per side.
- Top each chicken breast with a slice of mozzarella.
- Close the grill lid and cook a few additional minutes until cheese melts and chicken finishes cooking.
- Remove chicken from grill.
- Top each chicken breast with tomato slices and sliced basil.
- Prepare balsamic reduction by adding balsamic vinegar and brown sugar to a small saucepan.
- Simmer the mixture for about 10 minutes until reduced by half.
- Drizzle balsamic reduction over chicken and serve immediately.
Notes
- Use fresh mozzarella for the best melting texture and flavor.
- Allow chicken to rest briefly before serving for juicier results.
- The balsamic reduction can be made ahead and reheated before serving.
