Description

Juicy grilled steak, smoky corn, fresh greens, and creamy Gorgonzola tossed with a tangy balsamic dressing for a hearty main-dish salad.


Ingredients

  • 1 lb flank steak (or ribeye or sirloin)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 6 cups mixed greens
  • 1 ear corn grilled and cut off the cob
  • 1/2 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/3 cup crumbled Gorgonzola cheese
  • 1/4 cup walnuts or pecans toasted
  • 1 avocado sliced optional
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Mix olive oil, balsamic vinegar, salt, pepper, garlic powder, and smoked paprika then rub over the steak and marinate for 20 minutes.
  2. Heat a grill or skillet over medium-high heat and cook the steak for 4–5 minutes per side until medium-rare or medium.
  3. Remove steak from heat, rest for 5 minutes, then slice thinly against the grain.
  4. Brush corn with olive oil and grill for 8–10 minutes turning occasionally until lightly charred.
  5. Let corn cool and cut kernels from the cob.
  6. Whisk balsamic vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper to make the dressing.
  7. In a large bowl combine mixed greens, tomatoes, red onion, grilled corn, and toasted nuts.
  8. Add sliced steak and sprinkle Gorgonzola cheese over the salad.
  9. Drizzle balsamic dressing over the salad and toss gently to combine.
  10. Top with avocado slices if desired and serve immediately.

Notes

  1. Slice the steak against the grain for tender bites.
  2. Let the steak rest before slicing to keep juices inside.
  3. Add dressing just before serving to keep greens crisp.
