Description

Grilled Avocado Chicken is a fresh and flavorful dish featuring marinated grilled chicken topped with creamy avocado, juicy tomatoes, and melted cheese.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 California avocados sliced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Optional: chopped cilantro, balsamic glaze, diced red onion

Instructions

  1. Whisk olive oil, lime juice, garlic, paprika, cumin, salt, and pepper
  2. Add chicken and coat well, then marinate for at least 30 minutes
  3. Preheat grill to medium-high heat and oil grates
  4. Grill chicken 6 to 7 minutes per side until internal temperature reaches 165°F
  5. Top with avocado, tomatoes, and cheese
  6. Close lid for 1 to 2 minutes to melt cheese
  7. Remove from grill and serve with optional toppings

Notes

  1. Marinate up to 4 hours for deeper flavor
  2. Use ripe avocados for best texture
  3. Avoid overcooking chicken to keep it juicy
