Description
Crispy smashed potatoes cooked on a Blackstone griddle with buttery flavor and golden brown crispy edges.
Ingredients

- 1 1/2 pounds baby potatoes
- 1 teaspoon salt
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1 teaspoon Simply Three seasoning
Instructions
- Boil the baby potatoes in salted water over medium heat for about 30 minutes until fork tender
- Drain the water and return potatoes to the warm pan to remove remaining moisture
- Preheat the Blackstone griddle to medium high heat
- Add 2 tablespoons olive oil and 2 tablespoons butter to the griddle and spread evenly
- Place potatoes on the hot griddle and smash each with the bottom of a spatula
- Cook until the bottom becomes golden and crispy
- Flip each potato and add remaining olive oil and butter around them
- Cook until both sides become crispy and golden
- Sprinkle seasoning over the potatoes and toss lightly before serving
Notes
- Top cooked smashed potatoes with shredded cheese chopped bacon or other toppings
- You can cook smashed potatoes in a skillet on the stove if a griddle is not available
- Do not cover the potatoes with a dome lid while cooking
- Store leftovers in an airtight container in the refrigerator for up to 6 days
