Description

Loaded nachos cooked on a Blackstone griddle with seasoned beef, beans, and melted cheese. A simple outdoor appetizer or quick dinner packed with bold flavor.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/3 cup salsa
  • 2 tablespoons water
  • 15 ounces black beans drained and rinsed
  • 12 ounces thick tortilla chips
  • 1 1/2 cups grated cheddar cheese
  • 1 1/2 cups grated Monterey Jack cheese
  • Diced Roma tomatoes
  • Sour cream or Mexican crema
  • Diced red onions
  • Chopped cilantro
  • Sliced jalapenos
  • Sliced black olives
  • Cubed avocado

Instructions

  1. Preheat the Blackstone griddle over medium heat
  2. Spread olive oil across the griddle surface
  3. Add ground beef and chopped onions then cook while breaking the beef into small pieces until browned
  4. Push excess grease into the grease trap
  5. Sprinkle taco seasoning over the meat then add salsa and water and stir well
  6. Spread tortilla chips on a baking sheet
  7. Top chips with half the shredded cheese
  8. Add the cooked beef mixture and black beans evenly
  9. Sprinkle the remaining cheese over the top
  10. Place the baking sheet on the Blackstone griddle and cover
  11. Cook for 10 to 15 minutes until the cheese melts
  12. Remove from the griddle and add toppings
  13. Serve warm

Notes

  1. Use thick tortilla chips so they stay crisp
  2. Drain grease from the beef to prevent soggy chips
  3. Store leftovers in the refrigerator for up to two days
  4. Reheat in a hot oven until the chips crisp again
