Description

This Green Goddess Salad features finely chopped cabbage, cucumber, and herbs tossed in a creamy vegan dressing inspired by the TikTok favorite from Baked by Melissa.


Ingredients

  • 1 small green cabbage (68 cups), finely chopped
  • 1 large English cucumber, finely chopped
  • 1/4 cup fresh chives, chopped
  • 1 bunch green onions or scallions, finely chopped
  • 1 cup fresh basil leaves
  • 1 cup fresh spinach
  • 2 garlic cloves
  • 1 small shallot
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 cup unsalted cashews
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar

Instructions

  1. Wash and finely chop the cabbage, cucumber, chives, and green onions.
  2. Place all chopped vegetables into a large bowl.
  3. Add lemon juice, olive oil, and rice vinegar to a blender.
  4. Add basil, spinach, garlic, shallot, cashews, nutritional yeast, and salt.
  5. Blend until smooth and thick but pourable.
  6. Pour dressing over vegetables and mix well before serving.

Notes

  1. Store salad in an airtight container in the refrigerator for up to one week.
  2. For best texture, store dressing separately and mix before serving.
