Description

Greek Pasta Salad is a vibrant Mediterranean dish with pasta, feta, cucumbers, tomatoes, and olives tossed in a light olive oil dressing. Perfect for potlucks or meal prep.


Ingredients

Scale

16 ounces rotini pasta

¾ English cucumber, diced

1 pint grape tomatoes, halved

1 bell pepper (red or orange), diced

½ cup sliced pitted olives

½ cup crumbled feta cheese

⅓ cup diced red onion

Dressing:

1 cup Greek dressing OR

¼ cup red wine vinegar

⅓ cup olive oil

½ tsp garlic powder

1 tsp dried oregano

Salt & pepper to taste


Instructions

1. Whisk together dressing ingredients.

2. Cook pasta al dente; rinse under cold water.

3. Combine all ingredients in a large bowl.

4. Add dressing and toss to coat.

5. Refrigerate at least 2 hours before serving.

Notes

For a heartier version, add grilled chicken or shrimp.

Use whole-grain pasta for a higher fiber option.

Keep refrigerated and consume within 4 days.
