For the Chicken Skewers:

  • 1.5 lbs (700g) boneless, skinless chicken breasts or thighs, cut into chunks

  • 1/4 cup olive oil

  • 1/4 cup fresh lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano (or 1 tbsp fresh)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Wooden or metal skewers

For the Tzatziki Sauce:

  • 1 cup full-fat Greek yogurt

  • 1/2 cucumber, grated and squeezed dry

  • 1 garlic clove, minced

  • 1 tbsp fresh lemon juice (or white vinegar)

  • 1 tbsp chopped fresh dill

  • 1 tbsp olive oil

  • Salt to taste

Notes

Don’t skip resting time after grilling—it keeps the chicken juicy.

For a dairy-free version, use plant-based yogurt in tzatziki.

Store leftover tzatziki in fridge (up to 3 days). Do not freeze.
