Description

Juicy Greek Chicken Kabobs marinated in olive oil, lemon, garlic, and herbs, then grilled to perfection for a flavorful Mediterranean dish.


Ingredients

Scale
  • 4 tablespoons olive oil, divided
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 3 cloves garlic, minced
  • 1 shallot, diced
  • Kosher salt and black pepper to taste
  • 2 pounds boneless skinless chicken thighs, cut into chunks

Instructions

  1. In a bowl combine olive oil lemon juice lemon zest paprika oregano basil thyme garlic shallot salt and pepper
  2. Add chicken and mix well to coat evenly
  3. Cover and marinate for at least 2 hours or overnight
  4. Remove chicken and thread onto skewers
  5. Brush with remaining olive oil and season lightly
  6. Preheat grill to medium heat
  7. Grill skewers turning occasionally until chicken reaches 165°F about 10 minutes
  8. Serve immediately

Notes

  1. Marinate overnight for deeper flavor
  2. Do not overcrowd skewers for even cooking
  3. Use fresh lemon juice for best taste
  4. Turn skewers regularly while grilling
