Description

A crisp and colorful Mediterranean-inspired salad featuring fresh greens, vibrant vegetables, and a tangy homemade dressing. This refreshing dish is quick to make and perfect for any occasion.


Ingredients

For the Dressing:

  • 1/2 cup neutral vegetable oil

  • 1/2 cup extra virgin olive oil

  • 2 tsp Dijon mustard

  • 2 tbsp honey

  • 1/4 cup red wine vinegar

  • 1 tsp sea salt

  • 1/2 tsp black pepper

For the Salad:

  • 6 cups mixed salad greens

  • 2 Persian cucumbers, chopped

  • 1/2 cup sliced red onion

  • 1 cup sliced bell peppers (yellow, orange, red)

  • 2 tomatoes, cut into wedges

  • Salt and pepper, to taste


Instructions

  1. Make the dressing: Combine all dressing ingredients in a jar. Shake until emulsified. Adjust seasoning if needed.

  2. Marinate vegetables: Toss cucumbers, onion, peppers, and tomatoes with 2–3 tbsp of dressing. Let sit 5 minutes.

  3. Dress the greens: Toss salad greens with a small amount of dressing in a separate bowl.

  4. Assemble: Arrange greens on a platter and top with marinated vegetables. Serve immediately.

Notes

Add olives, feta, or grilled chicken for more flavor and protein.

Dressing can be made ahead and stored for up to a week.

Fresh herbs like oregano or basil enhance the Mediterranean flavor.
