Description

A simple gluten-free strawberry cobbler made with fresh strawberries and a dairy-free topping.


Ingredients

  • ½ cup dairy-free butter
  • ¾ cup almond or cashew milk
  • 1 tablespoon apple cider vinegar
  • 2 lbs fresh strawberries
  • 1 ¼ cup sugar, divided
  • 2 tablespoons cornstarch
  • 1 cup gluten-free flour mix
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt

Instructions

  1. Preheat oven to 350°F and place dairy-free butter in a 9×13-inch baking dish to melt
  2. Mix almond milk and apple cider vinegar and let sit briefly
  3. Wash, hull, and slice strawberries, then mix with sugar and cornstarch
  4. Whisk gluten-free flour, sugar, baking powder, and salt, then mix in milk mixture
  5. Pour batter over melted butter without stirring
  6. Spoon strawberries evenly over batter without stirring
  7. Bake for 50-60 minutes until golden brown and set
