- 1 stick unsalted butter
- 2 cups gluten-free all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 3/4 cups granulated sugar
- 1 1/4 cups milk of choice
- 3–4 cups sliced peaches
- 1/4 cup granulated sugar
Instructions
- Preheat oven to 350°F.
- Place butter in a 9×13-inch baking dish and melt in oven.
- Whisk flour, baking powder, salt, and sugar together.
- Gradually whisk in milk until batter is smooth.
- Pour batter over melted butter without stirring.
- Arrange peaches evenly over batter.
- Sprinkle remaining sugar over peaches.
- Bake 45 to 55 minutes until golden brown.
- Rest 30 minutes before serving.
Notes
- Fresh, frozen, or canned peaches all work well.
- Thaw frozen peaches before using.
- Drain and rinse canned peaches thoroughly.
- Serve warm with vanilla ice cream if desired.
