2 cups all-purpose flour

1 ½ tsp baking soda

½ tsp salt

1 ½ tsp ground ginger

¾ cup brown sugar

¾ cup molasses

2 large eggs

1 cup hot water or milk

¼ cup butter (or oil)

Optional: 1 tsp vanilla extract

Optional: 1 tsp ground nutmeg
Instructions

Preheat the oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.

In a large bowl, mix the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.

In another bowl, cream the butter and brown sugar together until smooth and fluffy.

Add eggs one at a time, mixing well after each addition. Then, add the molasses and mix until smooth.

Slowly add the dry ingredients to the wet mixture, mixing until just combined.

Gradually add hot water or milk, stirring until the batter is smooth and thin.

Pour the batter into the prepared pan and spread it out evenly.

Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.

Let the cake cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.
Notes
Molasses gives the cake its dark color and rich flavor.
This cake can be made ahead and stored at room temperature for up to 3 days.
For a lighter flavor, you can reduce the amount of ginger and cloves.
