Description

Crispy Garlic Zucchini Balls with Parmesan, herbs, and garlic. Perfect as a healthy appetizer, snack, or side dish.


Ingredients

Scale
  • 2 medium zucchinis, grated and squeezed dry
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • Cooking spray

Instructions

  1. Preheat oven to 425°F or air fryer to 400°F
  2. Grate zucchini and squeeze out excess moisture
  3. Combine all ingredients in a large bowl
  4. Mix until fully incorporated
  5. Shape mixture into small balls
  6. Place on baking sheet or air fryer basket
  7. Spray lightly with cooking spray
  8. Bake 20 to 25 minutes or air fry 10 to 12 minutes until golden brown
  9. Cool slightly and serve

Notes

  1. Remove as much moisture as possible from zucchini
  2. Do not overcrowd cooking surface
  3. Serve with marinara or yogurt sauce
