Description

This Garlic Parmesan Crockpot Chicken and Potatoes is an easy slow cooker dinner that combines juicy chicken, tender baby potatoes, and a garlicky parmesan coating. With just 10 minutes of prep, the crockpot does the rest, delivering a creamy, comforting meal that’s family-friendly and weeknight approved. Ingredients

  • 4 boneless, skinless chicken breasts (about 680 g)

  • 1.5 lbs (680 g) baby potatoes, halved

  • 1 cup (240 ml) chicken broth

  • ½ cup (50 g) grated parmesan cheese

  • 4 cloves garlic, minced

  • 1 tbsp (15 g) Italian seasoning

  • 1 tsp (5 g) salt

  • ½ tsp (2.5 g) black pepper

  • ½ tsp (2.5 g) red pepper flakes (optional)

  • 2 tbsp (30 ml) olive oil

  • Fresh parsley, chopped (optional, ~10 g)


Instructions

  • Wash and halve potatoes. Mince garlic.

  • Rub chicken with olive oil, then season with Italian seasoning, salt, pepper, and red pepper flakes if using.

  • Place potatoes in the crockpot first, then layer chicken on top.

  • Pour chicken broth evenly over everything.

  • Sprinkle garlic and parmesan cheese over the chicken and potatoes.

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours.

  • Ensure chicken reaches 165°F (75°C) and potatoes are fork-tender.

  • Spoon sauce over chicken and potatoes, garnish with parsley, and serve.

Notes

Add a splash of heavy cream or cream cheese at the end for a creamier sauce.

Chicken thighs can replace breasts for a juicier result.

Use regular potatoes if needed, just cut into smaller chunks.

For best results, cook on low for more tender chicken.
