Ingredients
-
4 boneless, skinless chicken breasts (about 680 g)
-
1.5 lbs (680 g) baby potatoes, halved
-
1 cup (240 ml) chicken broth
-
½ cup (50 g) grated parmesan cheese
-
4 cloves garlic, minced
-
1 tbsp (15 g) Italian seasoning
-
1 tsp (5 g) salt
-
½ tsp (2.5 g) black pepper
-
½ tsp (2.5 g) red pepper flakes (optional)
-
2 tbsp (30 ml) olive oil
-
Fresh parsley, chopped (optional, ~10 g)
Instructions
-
Wash and halve potatoes. Mince garlic.
-
Rub chicken with olive oil, then season with Italian seasoning, salt, pepper, and red pepper flakes if using.
-
Place potatoes in the crockpot first, then layer chicken on top.
-
Pour chicken broth evenly over everything.
-
Sprinkle garlic and parmesan cheese over the chicken and potatoes.
-
Cover and cook on low for 6–7 hours or on high for 3–4 hours.
-
Ensure chicken reaches 165°F (75°C) and potatoes are fork-tender.
-
Spoon sauce over chicken and potatoes, garnish with parsley, and serve.
Notes
Add a splash of heavy cream or cream cheese at the end for a creamier sauce.
Chicken thighs can replace breasts for a juicier result.
Use regular potatoes if needed, just cut into smaller chunks.
For best results, cook on low for more tender chicken.
