Description

Juicy seasoned chicken and tender rice cook together in chicken broth before heavy cream and freshly shredded Parmesan create a rich, comforting finish.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken, cut into 1-inch pieces
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • 2 1/2 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 1 1/2 tablespoons freshly minced garlic
  • 1 1/2 cups uncooked long-grain white rice
  • 3 1/4 cups low-sodium chicken broth
  • 1/2 cup freshly shredded Parmesan cheese
  • 2/3 cup heavy cream
  • 2 tablespoons finely chopped fresh parsley
  • Extra Parmesan cheese for serving, optional

Instructions

  1. Pat the chicken dry with paper towels. Season it with paprika, garlic salt, black pepper, and dried thyme.
  2. Melt the butter in a large pot over medium-high heat. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, until lightly browned. Transfer the chicken to a plate.
  3. Add the diced onion to the same pot and cook for 3 to 4 minutes. Add the minced garlic and cook for 1 minute.
  4. Return the chicken and its juices to the pot. Stir in the rice and toast it for 1 to 2 minutes.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15 to 20 minutes, until the rice becomes tender and absorbs the liquid.
  6. Remove the pot from the heat and let it stand, covered, for 2 minutes.
  7. Stir in the heavy cream and freshly shredded Parmesan until the cheese melts and the rice turns creamy.
  8. Divide among four bowls. Garnish with chopped parsley and extra Parmesan before serving.

Notes

  1. Use freshly shredded Parmesan for a smoother sauce.
  2. Do not stir the rice frequently while it simmers.
  3. Add a splash of chicken broth when reheating leftovers.
  4. Store leftovers in an airtight container in the refrigerator for up to three days.
