Description

Simple roasted potatoes, carrots, zucchini, garlic, and herbs roasted until golden and flavorful.


Ingredients

Scale
  • 1.5 pounds baby potatoes, halved
  • 1 pound carrots, peeled and cut into chunks
  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon black pepper
  • 1 large zucchini, cut into thick half-moons
  • 56 whole garlic cloves
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Toss potatoes, carrots, and garlic with olive oil, herbs, salt, and pepper.
  3. Spread on a baking sheet and roast for 20 minutes.
  4. Toss zucchini with remaining oil and salt.
  5. Flip vegetables and add zucchini to the pan.
  6. Roast another 15 to 20 minutes until golden and tender.
  7. Finish with lemon juice or parsley and serve.

Notes

  1. Whole garlic cloves roast better than minced garlic.
  2. Use thick zucchini pieces to prevent mushiness.
  3. Do not overcrowd the pan for crisp vegetables.
