Ingredients
For the Steak Bites:
-
1 lb (450 g) sirloin or ribeye, cut into bite-sized cubes
-
2 Tbsp (30 ml) olive oil
-
4 cloves garlic, minced
-
3 Tbsp (45 g) unsalted butter
-
Salt and pepper, to taste
-
Optional: chopped fresh parsley, for garnish
For the Parmesan Cream Sauce:
-
1 Tbsp (15 g) unsalted butter
-
2 cloves garlic, finely minced
-
1 cup (240 ml) heavy cream
-
½ cup (50 g) freshly grated Parmesan cheese
-
Salt and black pepper, to taste
-
Optional: pinch of red pepper flakes
Instructions
-
Prep the steak: Pat steak cubes dry with paper towels and season with salt and pepper.
-
Sear: Heat olive oil in a skillet over medium-high heat. Add steak in batches, searing each side 2–3 minutes until golden. Remove and set aside.
-
Garlic butter: Lower heat to medium, melt butter, and sauté garlic for 30 seconds. Return steak bites, tossing to coat in garlic butter.
-
Cream sauce: In a separate saucepan, melt butter over medium. Add garlic and cook 30 seconds. Pour in cream, bring to a simmer, then stir in Parmesan until smooth. Season with salt, pepper, and red pepper flakes.
-
Serve: Plate steak bites and drizzle with sauce or serve sauce on the side. Garnish with parsley.
Notes
Don’t overcrowd the skillet—batch cooking ensures a perfect sear.
Garlic burns quickly—sauté until fragrant only.
Thin thick sauce with a splash of milk or broth.
For a lighter option, replace heavy cream with half-and-half.
