For the Steak Bites:

  • 1 lb (450 g) sirloin or ribeye, cut into bite-sized cubes

  • 2 Tbsp (30 ml) olive oil

  • 4 cloves garlic, minced

  • 3 Tbsp (45 g) unsalted butter

  • Salt and pepper, to taste

  • Optional: chopped fresh parsley, for garnish

For the Parmesan Cream Sauce:

  • 1 Tbsp (15 g) unsalted butter

  • 2 cloves garlic, finely minced

  • 1 cup (240 ml) heavy cream

  • ½ cup (50 g) freshly grated Parmesan cheese

  • Salt and black pepper, to taste

  • Optional: pinch of red pepper flakes


Instructions

  • Prep the steak: Pat steak cubes dry with paper towels and season with salt and pepper.

  • Sear: Heat olive oil in a skillet over medium-high heat. Add steak in batches, searing each side 2–3 minutes until golden. Remove and set aside.

  • Garlic butter: Lower heat to medium, melt butter, and sauté garlic for 30 seconds. Return steak bites, tossing to coat in garlic butter.

  • Cream sauce: In a separate saucepan, melt butter over medium. Add garlic and cook 30 seconds. Pour in cream, bring to a simmer, then stir in Parmesan until smooth. Season with salt, pepper, and red pepper flakes.

  • Serve: Plate steak bites and drizzle with sauce or serve sauce on the side. Garnish with parsley.

Don’t overcrowd the skillet—batch cooking ensures a perfect sear.

Garlic burns quickly—sauté until fragrant only.

Thin thick sauce with a splash of milk or broth.

For a lighter option, replace heavy cream with half-and-half.
