Quick garlic butter steak bites with zucchini, ready in 15 minutes and perfect for a low carb dinner.
Ingredients
Scale
- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (optional)
Instructions
- Pat steak dry and season with salt and pepper
- Heat olive oil in skillet over medium-high heat
- Add steak in single layer and sear 1-2 minutes per side
- Remove steak and set aside
- Add butter and cook garlic for 30 seconds
- Add zucchini and cook 3-5 minutes until tender-crisp
- Return steak and toss with garlic butter
- Cook 1-2 minutes and serve immediately
Notes
- Substitute zucchini with broccoli or bell peppers if desired
- Adjust garlic to taste
- Use a hot skillet for best sear
