Description

Quick garlic butter steak bites with zucchini, ready in 15 minutes and perfect for a low carb dinner.


Ingredients

Scale
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Pat steak dry and season with salt and pepper
  2. Heat olive oil in skillet over medium-high heat
  3. Add steak in single layer and sear 1-2 minutes per side
  4. Remove steak and set aside
  5. Add butter and cook garlic for 30 seconds
  6. Add zucchini and cook 3-5 minutes until tender-crisp
  7. Return steak and toss with garlic butter
  8. Cook 1-2 minutes and serve immediately

Notes

  1. Substitute zucchini with broccoli or bell peppers if desired
  2. Adjust garlic to taste
  3. Use a hot skillet for best sear
