For the Shrimp Scampi:

  • 1 ½ lbs medium or large shrimp (peeled, deveined, tails off)

  • 4 tbsp butter

  • 45 cloves garlic (minced)

  • Juice of ½ lemon

  • 2 tbsp fresh parsley (chopped)

  • Salt and black pepper to taste

  • Pinch of red pepper flakes (optional)

For the Lasagna Layers:

  • 912 lasagna noodles (boiled or oven-ready)

  • 1 ½ cups ricotta cheese

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup heavy cream or milk

  • Additional chopped parsley (optional, for garnish)


Instructions

Prepare the Shrimp Scampi:

  • Heat butter in a large skillet. Add garlic and cook 30 seconds.

  • Add shrimp. Cook 2–3 minutes per side until pink.

  • Stir in lemon juice, parsley, salt, and pepper. Remove from heat.

  • Set shrimp aside and reserve the sauce.

2. Cook Lasagna Noodles:

  • If using regular noodles, boil until al dente. Drain and cool.

  • Lay flat to prevent sticking.

3. Assemble the Lasagna:

  • Preheat oven to 375°F (190°C).

  • Spread a little butter sauce on the bottom of a 9×13 dish.

  • Layer noodles, ricotta, shrimp, sauce, mozzarella, and Parmesan.

  • Repeat layers. Top with cheese.

4. Bake:

  • Cover with foil. Bake for 25 minutes.

  • Uncover and bake 10–15 more minutes until bubbly and golden.

  • Let rest 10 minutes before cutting. Garnish with parsley if desired.

Notes

  • Use fresh garlic for the best flavor.

  • Don’t overcook the shrimp. It should be just pink.

  • Let the lasagna rest before serving — it sets and slices better.
