Description

Tangy green tomatoes baked with garlic, basil, smoky cheese, and a rustic masa crust. Perfect for brunch or a light meal.


Ingredients

  • 1 pound green tomatoes, sliced 1/4-inch thick
  • 1 1/2 cups shredded smoked cheese blend
  • 1 small onion, chopped
  • 1 green chili or jalapeño, minced (optional)
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons dried basil
  • 2 tablespoons cornmeal
  • 1/2 cup masa harina
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon sugar
  • 1/3 cup butter
  • 1/2 cup frozen corn, thawed
  • 1/3 cup cold water

Instructions

  1. Preheat oven to 400°F.
  2. Mix cornmeal, masa harina, flour, salt, baking powder, and sugar.
  3. Cut butter into dry ingredients until crumbly.
  4. Pulse corn and water together, then stir into mixture to form dough.
  5. Roll dough and press into a 10-inch tart pan.
  6. Sauté onion, garlic, and optional pepper in olive oil for 3 to 4 minutes.
  7. Mix salt, pepper, thyme, and basil together.
  8. Sprinkle 1 cup cheese over crust.
  9. Spread sautéed onion mixture over cheese.
  10. Sprinkle half the seasoning over the filling.
  11. Layer sliced green tomatoes over the tart.
  12. Add remaining seasoning and top with remaining cheese.
  13. Bake for 35 to 40 minutes until golden and bubbly.
  14. Cool slightly before slicing and serving.

Notes

  1. Use a blend of smoked cheddar and Gruyère for rich flavor.
  2. Allow the tart to rest before slicing.
  3. Serve with marinara sauce or honey mustard.
