Description

Fresh Broccoli Pasta Salad is a creamy, crunchy, and make-ahead friendly side dish perfect for picnics, meal prep, and family gatherings.


Ingredients

  • 16 oz rotini pasta
  • 1 lb broccoli florets
  • 1/2 cup diced red onion
  • 1/2 lb cooked bacon
  • 2 cups mayonnaise
  • 1/2 cup red wine vinegar
  • 1/2 cup granulated sugar
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  1. Cook pasta according to package directions until al dente
  2. Drain and cool the pasta completely
  3. Chop broccoli into bite-sized florets and dice onion
  4. Cook bacon until crispy and crumble it
  5. Mix mayonnaise, vinegar, sugar, salt, and pepper in a bowl
  6. Combine pasta, dressing, broccoli, and onion
  7. Stir until evenly coated
  8. Refrigerate for at least 3 hours
  9. Add bacon just before serving and mix gently
