Ingredients

  • 1 lb lean ground beef

  • 1 cup long-grain white rice (uncooked)

  • 1 can (10.5 oz) condensed French onion soup

  • 1 cup beef broth or consommé

  • 1 large yellow onion, thinly sliced

  • 1 tbsp butter

  • 1 cup shredded cheese (cheddar, Swiss, or mozzarella)

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp dried thyme

  • 1/4 tsp black pepper

  • 1 cup French fried onions (for topping)

  • Salt to taste (optional)

Optional Add-ins:

  • 1/2 cup diced bell peppers

  • 1/2 cup sliced mushrooms

  • 1 cup chopped spinach

  • 1/2 cup sour cream or 1 can cream of mushroom soup (for a creamier texture)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a skillet, melt butter over medium heat. Add onions and cook until golden and caramelized. Set aside.

  • In the same skillet, brown ground beef until no longer pink. Drain excess fat.

  • In a large mixing bowl, combine beef, onions, uncooked rice, French onion soup, broth, seasonings, and any optional add-ins. Stir well.

  • Pour mixture into a greased 9×13-inch baking dish. Cover with foil.

  • Bake covered for 30 minutes.

  • Remove foil, sprinkle cheese on top, and bake uncovered for 10–15 more minutes, until cheese is melted and bubbly.

  • Just before serving, top with French fried onions and optional parsley.

  • Let rest for 5–10 minutes before slicing and serving.

Notes

Rinse rice before using to prevent clumping.

If using instant rice, reduce liquid slightly and shorten cooking time.

Customize with vegetables or creamy add-ins to suit your taste.

Leftovers store well and can be frozen for up to 3 months.
