Description

  • Optional: mushrooms, spinach, crispy fried onions, or other toppings


Instructions

  • Preheat the oven: Set your oven to 350°F (175°C).

  • Caramelize the onions: In a large pan, melt butter over medium heat. Add sliced onions and cook slowly, stirring often, until soft and golden (about 25-30 minutes). Add a splash of broth if the onions start to stick.

  • Prepare the casserole: In a greased baking dish, spread uncooked rice on the bottom. Top with the caramelized onions and seasoned chicken breasts.

  • Add the broth: Pour the beef (or chicken) broth over the chicken and rice. Sprinkle with thyme, garlic powder, salt, and pepper.

  • Bake: Cover the dish with foil and bake for 45-55 minutes until the rice is cooked and the chicken is tender.

  • Add the cheese: Remove the foil, sprinkle shredded cheese on top, and broil for 2-4 minutes until the cheese is melted and bubbly.

Notes

You can use chicken thighs for extra juiciness.
