Sear the short ribs: Heat a large pot over medium-high heat. Brown ribs 5–7 minutes on all sides. Remove and set aside.

Caramelize the onions: In the same pot, cook onions over medium heat 20–25 minutes, stirring occasionally, until golden and fragrant.

Simmer the soup: Return short ribs to pot. Add broth, thyme, and balsamic vinegar. Bring to a boil, then reduce heat and simmer uncovered for 1 hour until ribs are tender.

Shred the beef: Remove ribs, shred meat with two forks, and discard bones. Return meat to pot and stir.
