Description

- 6 large apples, peeled, cored, and diced
- 2 1/2 cups granulated sugar
- 5 cardamom pods, lightly crushed
- Juice of 2 lemons, divided
- Cold water for soaking apples
Instructions
- Fill a large bowl with cold water and add the juice of one lemon.
- Peel, core, and quarter the apples, then place them into the lemon water.
- Drain the apples and finely dice them.
- Add the apples to a heavy pot with sugar, cardamom pods, and the remaining lemon juice.
- Bring the mixture to a boil over medium-high heat while stirring often.
- Cook uncovered for 30 to 40 minutes until thickened.
- Blend lightly with an immersion blender if desired for smoother texture.
- Ladle the jam into sterilized jars and seal tightly.
- Cool completely before refrigerating or freezing.

- Store refrigerated for up to 3 weeks.
- Freeze in freezer-safe containers for up to 12 months.
- Leave 1/2 inch headspace before freezing.
